Caramelised bacon & scrambled white chocolate eggs

Ingredients:

The eggs...

  • 5 eggs
  • 1 cup cream
  • 1 sachet of Jarrah white drinking chocolate
  • Cracked black pepper & salt to taste
The bacon...
  • Preheat oven to 375 degrees F (190 degrees C).
  • 1 pkt sliced bacon
  • 1 1/4 cups packed brown sugar
  • 1/2 teaspoon ground cinnamon

Method:
In a shallow bowl, mix brown sugar and cinnamon. Dip bacon slices in the brown sugar mixture to coat, and arrange in a single layer on a baking sheet. Bake 8 minutes in the preheated oven, turning once, until dark golden brown. Allow to cool slightly before serving.

Mix the remaining ingredients with the eggs and beat them well to make a scrambling mix. Stir over a gentle heat until thick; do not allow them to become hard. Serve hot.
